Menu Plan Monday

I’m a little ahead of the game this week!  I actually made two dinners today that I can just pop in the oven this week… meatloaf and stuffed shells.  I’ve never made stuffed shells before but it was pretty easy.   Here’s the plan for the week…

Monday:  Meatloaf, spinach, and mashed potatoes

Tuesday: Chicken Penne a la Vodka and garlic bread

Wednesday: Spinach/Artichoke French Bread Pizza (a recipe in Rachel Ray’s recent mag)

Thursday: Taco Salad

Friday: Stuffed Shells

Saturday: Out to eat…Hubby’s birthday celebration :)!

Some repeats from last weeks list since I didn’t follow it completely.  I did make the insides of the chicken pot pie tonight so we’ll definately be having that tomorow.  I still need to get the recipe for the Pasta with Almonds from my Mom, but she made it for Christmas for my vegetarian cousin and it was SOOOOO delicious, so I’m determined to make it this week :).

Ok, so most of the Christmas stuff is down and I even mananged to go through it, pack it all into plastic bins and label each box with what’s inside.  No more piles of cardboard boxes of all different sizes teetering on top of each other.  I even packed the breakable ornaments separately.  All that’s left is the Nativity set and all the Christmas stuff will be away. 

My next project is working on our grocery budget.  I had already planned to try and keep track of all the money we spend on groceries starting on January 1st, but I was very happy to find links to MommySnacks.net  ‘s forms to help track grocery spending.  There’s one to track your total spending and your percentage of savings if you use coupons.  The other lets you track what you spend/save at each store weekly.  Check it out if you’re looking for a pretty simple tracking system that does all the adding for you :). 

Speaking of groceries…$5 Dinners is doing a $25 Kroger’s Give away so stop over and enter to win!   I’ve actually never shopped at Kroger’s before but I’ve heard so much about it that when I saw this contest I decided to see if there was one anywhere near me and it turns out there’s one right in my Aunt and Uncle’s town about 45 minutes away.  We’ll be helping them move out of their house soon so I’ll have to scoot over and check it out when I get there :)!

My other organizing goal is to start doing menu plans again.  I’d been doing them pretty regularly several months ago, but with the holidays and whatnot I’ve gotten away from it.  I think I’ll start that next week…by the time I get to sit down and work on it this week will be almost over anyway LoL!  I’ve got a whole chicken to cook and I think I’m going to try making a chicken pot pie with the leftovers…I’ve never done one before but I just love pot pies so we’ll have to see how that goes.  If anyone has a good recipe let me know :)!

Usually I’m happy to see 20 or so hits to this blog on a normal day and kind of figured I’d get a few extras on St. Patrick’s Day because of my title, but I couldn’t believe it when I saw 99 hits on Monday night!  I know that’s a drop in the bucket for a lot of people but I was quite impressed LoL.  Next year I’ll have to be more prepared and have an Irish giveaway or something! 

And I know I’m really late with this but here’s my menu plan for this week…

Monday: Corned Beef and Cabbage and Potato soup (of course!)

I know I’ve been slacking on the picture Saturday but I have been taking pictures…lots of them!  I just got a new camera, which I love!  I just haven’t gotten around to putting the software on my computer yet so I can upload pictures.  I got the HP R937, its got a 3.6″ viewing screen and a touch screen rather than buttons, plus its like having Photoshop right on your camera!  There’s all kinds of cool effects you can add to your photos like making it into a cartoon look or a kaliedascope, or making it look like a pencil sketch.  You can also do touch ups like if someone has a blemish on their face, and my favorite, the ‘slimming’ feature LoL!  I promise to get up some examples in by the weekend! 

Ok, before I go let me give one more plug for my Movie Quote Trivia…I think there’s four left to be guessed and I added hints.  I’ll post the answers on Friday if no one’s guessed them yet.

Ultimate Blog Party 2008 

Oops!  Should have mentioned right off the bat…Cead Mile Failte is Gaelic for One Hundred Thousand Welcomes!  I’m not from Ireland but we take our Irish Heritage very seriously.  Our big holiday is coming up on Monday and we can’t wait :)!

As for me, let me introduce myself…

I am Jen, mom to Abbey, my 3 1/2 year old daughter and wife to my hubby Scottie.  We live and New York and we’ve been married for over 8 years.  This blog is my spot to record the little moments I don’t want to forget, vent frustrations, post cute photos, yummy recipes, and funny little stories…mostly all geared towards Miss Abigail LoL!  Here’s a picture of Abbey and her Mamo (Irish for Grandma) I from our town’s St. Patrick’s Day Parade a couple of weeks ago (scroll down to see a pic of Abbey and I on the same day)…

And here’s my favorite party recipe to bring when I know there will be kids around…

Dirt Cake Recipe

1 16 oz package Oreo Cookies
1/2 cup (1 stick) Butter or margarine, softened
1 8oz block of cream cheese, softened
1 cup confectioners sugar
1 t vanilla
2 4 serving size boxes chocolate fudge pudding, instant
3 cups milk
1 12 oz tub whipped topping, thawed
A few gummi worms
Crush the cookies until they resemble potting soil. Set aside. Cream butter, cream cheese, sugar and vanilla until smooth, and fluffy; set aside. Combine the pudding mix and milk until well blended, then fold in the whipped topping. Gently fold the cream cheese and pudding mixtures together.To put the cake together, layer in a flower pot (about 8″ diameter) with 1/3 of the cookie crumbs followed by 1/2 the pudding mixture, 1/3 of the crumbs, the rest of the pudding mixture and topping with the remaining cookie crumbs. Refrigerate 10 to 12 hours. About 1/2 hour before serving, remove from refrigerator and decorate with flowers and gummi worms. Serve by digging out portions with a shovel.
